I love tarts in general, they are so delicious, I love their crunchy-creamy texture.
This tart is one of my favourites, I love it both in the cold season and in the summer when it’s very hot.
The lemon is special because it gives it a special flavour, but it is also very fresh.

This lemon tart consists of four layers with different textures.
At the base we have a perfect almond tart top, followed by the second layer with frangipane, followed by a delicious lemon cream and on top a white chocolate glaze with lemon that harmonizes this tart perfectly.

Lemon Tart

Ingredients
  

Tart Base

  • 50 g icing sugar
  • 25 g almond flour
  • 130 g flour
  • 85 g unsalted butter cold
  • 25 g egg half an egg
  • a pinch of salt

Frangipane

  • 55 g unsalted butter at room temperature
  • 60 g icing sugar
  • 1 egg
  • 60 g ground almond flour
  • 7 g flour

Lemon Cream

  • 2 eggs
  • 90 g sugar
  • 15 g cornstarch
  • 20 g water
  • 80 g lemon juice
  • 55 g unsalted butter
  • the zest of a lemon

Chocolate Lemon Glaze

  • 80 g white chocolate
  • 45 g double cream
  • 1 tbsp lemon juice
  • 1 tsp lemon zest

Instructions
 

Tart Base

  • In a bowl, sift together the powdered sugar, flour and almond flour.
  • Add salt, cold butter and mix with your hands until it becomes sandy. Do not mix too much.
  • Add the egg and knead until it becomes a homogeneous dough.
  • Give the dough a flat round shape, put it in a cling film and put it in the fridge for 2-3 hours. The longer it stays in the fridge, the softer the tart dough will be.

Frangipane

  • In a bowl, mix the butter with the powdered sugar until it becomes like a cream.
  • I add the egg
  • I add almond and white flour
  • Mix well and put in the fridge for 2 and a half hours

Baking the base and frangipane

  • Roll out the tart dough, place in a tray, prick with a fork and put in the freezer for an hour. Watch the video recipe to see how I did it.
  • Bake in a preheated oven at 160 degrees for 20 minutes. Watch the video recipe to see how I did it
  • After removing from the oven, brush the tart well with the remaining egg from the dough.
  • Add the frangipane layer and bake for another 20 minutes at 160 degrees.

Lemon Cream

  • In the saucepan, mix well the eggs, sugar, cornstarch, water, juice and lemon peel.
  • Put on low heat and stir continuously until it thickens.
  • I take the cream off the heat, add the butter, mix well and put it on top of the tart.

Chocolate Lemon Glaze

  • In a bowl, melt the chocolate with whipped cream and lemon juice.
  • Add the lemon peel and pour this glaze over the tart.
  • You can decorate and serve with sweetened cream.
